Don't blow it over a holiday!
Enjoy celebrating July 4th without gaining weight and blowing what you did all week. Try new things and watch your portion sizes. Remember it's about balance. Stay active too! If you're headed to a BBQ be sure to bring along a hearty-healthy side that you can enjoy guilt free. Don't arrive to the BBQ starving either. A hungry stomach will make bad choices.
Try this delicious and colorful salad with quinoa and veggies. Quinoa will provide a good source of protein. Don't be afraid to add other veggies as well. Quinoa will take on the flavors you put in it. This recipe is an Italian Quinoa Salad
Another favorite of mine is homemade guacamole with a twist! This is a guacamole with a Mexican flare! It is delicous. Watch your portion on the chips or exchange the chips for veggies.
Ingredients
1 tablespoon olive oil
1 cup corn (2 ears) or a can of corn rinsed
2 large avocados, mashed
1/4 cup feta, crumbled
2 tablespoons lime juice (~1 lime)
1 jalapeno pepper, finely diced
1/4 cup onion, finely diced
1 tablespoon cilantro, chopped
salt and pepper to taste
Directions
Heat the oil in a heavy skillet over medium-high heat, add the corn, toss and let it sit cooking until charred, about 6-10 minutes, mix it up and let it char again, about 6-10 minutes, and remove from heat.
Prepare the remaining ingredients.
Mix everything and enjoy!
You can add tomatoes as well and any other flavors that sound good. I use a spciy green chili olive oil to give a little more spice.
