Southwest Quinoa Salad
This is one of my favorites! It's very tasty and the best thing is that it's healthy. Has a great mixture of healthy fats, carbs and protiens. This is a great dish to take to a potluck to ensure something healthy for you to choose from. You will be surprised at who will love it. Even the quinoa haters have been known to enjoy this dish.
I love everything spicy so this is no exception. Of course you can always control the spice you add to this. Because this has such a blance of all your body needs, it can be a complete meal if you want it to be. Great for lunch too!
Ingredients
1 c. Quinoa
1 c. chopped Cilantro
1 can low sodium black beans, rinsed and drained
1 can of corn, rinsed and drained
1/2 c chopped red peppers
1 medium tomato chopped
2 - 3 Jalapenos, seeded and de-vained
2 - 3 Limes
1 - 2 Avocados
1 - 2 Tbsp of Chili oil or regular Olive Oil
1/4 c Feta (if desired. I left off)
salt to taste
Directions
Cook quinoa according to directions. I add fresh garlic when I cook mine for flavor.
While quinoa is cooking, chop all of your veggeis.
Soak half the cilantro in 1 tbsp of the oil and juice from one lime and let it soak.
When quinoa is ready let it set and cool for about 10-15 minutes. Pour into bowl and add all veggetables and beans. Fold into quinoa. Add remaining oil and juice from remaining limes along with the cilantro and oil mix and kosher salt. Mix together. Add half avocado and gently fold into dish. Top with chunks of avocado and Feta if desired. Can be served warm or chilled. Enjoy!
