Are you eating the rainbow?

Have you ever heard you should be eating the rainbow? What does that mean? Well, it means to eat as many colors as possible. It's kind of hard to do that. Did you know that we are supposed to be eating 7 - 13 vegetables a day. That's really hard to do and I eat healthy! I tend to stick with the fruits and veggies I love the most. I think we all do. We are creatures of habit so we continue to cook the same meals week after week. God created each and every fruit and veggie different and to serve us differently. Each color gives us different phytonutrients. For instance the red in tomatoes gives us lycopene and it's known to help fight cancer and improve heart health. It's also in watermelon, carrots and papaya. So every color does the body good in different ways. Eating the rainbow is also a great way to improve your immune health. That's why we have to eat THE RAINBOW especially right now!

You may say "How can I do this?". It can be overwhelming to think about all the things you may need to change but my advice is to take it one day at a time. Small changes is what improves your health. One small change I made in our family several years ago was adding Juice Plus to our daily lives. It's not the end all be all to health. Another way to get more veggies in your diet is to expand your recipes. Keep it simple. Simple-clean ingredients will make delicious meals for you and your family. When I make a meal, I make a double recipes and freeze them for later. One recipe I wanted to share with you is stuffed peppers. It's beautiful and has lots of veggies in it.

Italian Stuffed Peppers

INGREDIENTS

  • 1 lb Ground Turkey or Grass Fed Organic Ground Beef

  • Bell peppers (Red, Yellow, Orange. The more colors the better!)

  • 2 cups Organic Marinara Sauce

  • 1 cup of Organic Quinoa

  • 2 cups or heaping handfuls of organic Spinach

  • 1 cup chopped Zucchini

  • 1 cup of sliced cherry or grape tomatoes

  • 1 tsp - 2 tsp Italian seasoning

  • 1 tsp Garlic powder

  • Himalayan Salt to taste

  • Dairy Free Cheese or regular parmesan

DIRECTIONS

1. Pre-heat oven to 450 degrees. Coat pyrex dish with non-stick cooking spray.

2. Wash peppers, and cut around the stem to remove.

Cut peppers in half length-wise, and remove the seeds and ribs inside the peppers.

Set peppers on in pyrex or baking pan.

3. Cook ground meat in a large non-stick pan over medium-high heat. Stir and break up the beef or turkey while it’s cooking. When meat is almost completely cooked through, add the sauce and seasonings to the pan. Stir and continue to cook until the meat is completely cooked (when it is no longer pink). Add zucchini and tomatoes (or any other veggies you prefer).

4. After about 5 minutes add the spinach to the pan with the meat and stir until everything is well combined.

5.Scoop about 1/2 cup of the mixture into each pepper.

Sprinkle cheese among peppers.

Bake for 20-30 minutes, or until cheese is melted, and lightly golden brown.

Remove from the oven, let cool, and enjoy!!!
