Gluten & Dairy Free Blueberry Muffins

Most of my followers have seen my peanut butter-banana muffins. They are also gluten, dairy free and delicious. A lot of you have made them and they are now a staple in your home. I love seeing you add healthy choices to your menu for your family.

My house has been under renovations for almost 3 months and I was without a kitchen for a while. Trying to meal prep and have healthy choices in a house that is out of order is difficult. We are finally in the end of this process and it felt good to be able to be in my kitchen and bake these muffins filling my house with the delicious aroma.

These blueberry muffins have almond butter instead of peanut butter. I've used both almond butter and RX Maple Almond Butter. This adds a twist on the flavor but regular almond butter is perfectly fine too. Using the almond butter removes the strong flavor that peanut butter gives.

The banana and blueberries make these muffins perfectly sweet. No added refined sugars.

These muffins have only 6 main ingredients keeping them a healthy option for breakfast or a snack.

These were easy to make and the best thing is I already had these ingredients in my house.

INGREDIENTS:
  • 2 ripe medium-size bananas

  • 1/2 cup almond butter

  • 1/4 cup unsweetened vanilla almond milk

  • 2 eggs

  • 1/2 cup pure maple syrup

  • 1 tablespoon vanilla extract

  • 2 and 1/4 cup rolled oats

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup fresh blueberries

DIRECTIONS:

Preheat the oven to 350°F and then grease or line a muffin tin for 12-15 muffins.

Starting with the wet ingredients first, place everything except the blueberries into a blender or a food processor and blend for about 30 seconds, or until smooth.

Using a spoon, gently stir the blueberries into the batter. Pour the batter into the muffin tin, filling each about 3/4th of the way full. Bake in the oven for 20 minutes, until light golden brown.

Allow to to cool for at least 10-15 minutes.

Store leftovers in an airtight container for up to 3 days. I like to refrigerate these to keep them extra fresh. You can top these with a drizzle of more almond butter.
