No Bean Turkey Chili


Do you love chili but just can't handle the beans? Sometimes they can make me feel bloated and miserable. I have a solution for you to be able to enjoy that Fall Chili without the beans. It's simple and delicious. Gluten and Dairy free as well. Instead of the beans, we will use sweet potatoes to give us that starch.

There's many benefits to eating sweet potatoes. For as sweet as they are, sweet potatoes have a low glycemic index, which means they release sugar slowly into the bloodstream keeping you from having sugar spike. Sweet potatoes will help steady the levels of blood sugar. Sweet potatoes contain magnesium, the go-to mineral for de-stressing and a great to eat just before your cycle. Sweet potatoes are high in anti-inflammatory benefits. One sweet potato contains about half of the daily recommended intake of vitamin C. So these big orange potatoes are not only going to taste good they are going to benefit your body too.

Another ingredient in this chili that may catch you off guard is KALE! Kale yeah we're putting this nutrient dense green in our chili ;) It's loaded with powerful antioxidants and a great source of Vitamin C. Kale can help lower cholesterol, which may reduce the risk of heart disease and has numerous cancer fighting substances in it. These are just a few benefits that kale gives our bodies.

So as you can see this chili is going to do a body good!

Remember to be creative in your kitchen. You don't always have to stick exactly to the recipe. Make it your own!

Ingredients

  • 1lb lean ground turkey

  • ½ tsp salt

  • 1 bay leaf

  • ½ cup onion, chopped

  • 3 cloves garlic, minced

  • 1 can diced tomatoes

  • 1½ cups tomato sauce

  • 1 cup water

  • ½ tsp cumin

  • ¼ tsp chili powder

  • ¼ tsp paprika

  • ¼ tsp tumeric

  • 2½ cups finely chopped kale

  • 2 medium sweet potatoes, peeled and diced into small cubes

  • fresh cilantro, for garnish

Instructions

  1. In a large skillet, brown turkey over medium-high heat, breaking it up as it cooks into smaller pieces and season with salt and cumin.

  2. When meat is browned and cooked through add onion and garlic; cook 3 minutes over medium heat.

  3. Add the diced tomatoes, sweet potato, tomato sauce, water, chili powder, paprika, salt and bay leaf.

  4. Cover and simmer over medium-low heat until potatoes are soft and cooked through, about 20 minutes stirring occasionally.

  5. Add ¼ cup more water if needed.

  6. Add in chopped kale, and stir until kale is wilted.

  7. Remove bay leaf.

  8. Top with a dollop of plain Greek yogurt or sour cream and a sprig of cilantro!

Slow Cooker Instructions

  1. In a large skillet, brown turkey over medium-high heat, breaking it up as it cooks into smaller pieces and season with salt and cumin.

  2. When meat is browned and cooked through add onion and garlic; cook 3 minutes over medium heat.

  3. Put diced tomatoes, sweet potato, tomato sauce, water, chili powder, paprika, salt and bay leaf to Slow Cooker. Add cooked turkey and onions to slow cooker.

  4. Cook on Low for 6-8 hours or high for 4-5 hours or until sweet potatoes are tender.

  1. Add ¼ cup more water if needed.

  2. Add in chopped kale, and stir until kale is wilted.

  3. Remove bay leaf.

  4. Top with a dollop of plain Greek yogurt or sour cream and a sprig of cilantro!
